Prepara un delicioso Rigatoni gluten-free con queso ricotta & kale pesto

Las pastas son una tentación para la mayoría de las personas, sin embargo, se tiene la creencia de que engordan y es por ello que algunos no las consumen o cuando lo hacen sienten culpa.

El secreto para poder disfrutarlas es comerlas en porciones pequeñas y siempre acompañadas de verduras. Si tú, como nosotras, eres amante de las pastas, aquí te dejamos una deliciosa receta que además de ser muy rica, es alta en fibra, vitaminas y minerales.

-Porciones: 4

-Pesto: 

2 tazas de hojas de Kale 

1 taza de albahaca fresca

1/2 cdita. de sal de mar 

1/4 taza de aceite de oliva extra virgen 

1/4 taza de piñones 

2 dientes de ajo 

1/2 taza de queso parmesano rallado 

 –Pasta: 

1/2 kg de Rigatoni sin gluten 

1 taza de queso ricotta 

4 cditas de peperoncino 

-Preparación:

1. En un procesador combinar las hojas de kale y albahaca con sal. Con el motor encendido a baja velocidad, verter el aceite, seguido por el ajo, los piñones y el queso. Separar en un bowl y dejar reposar. 

2. Cocer la pasta al dente (nota: la pasta sin gluten tarda de 5-7 min más).

3. Escurrir reservando un poco del agua utilizada previamente. 

4. Revolver la pasta con la cantidad de pesto al gusto y un chorrito del agua que sobró.

5. Servir en porciones iguales y agregar una cucharada de queso ricotta, picante y decorar con parmesano.
